1 English Cucumber
1 can flaked tuna
1 shallot, finely chopped
2 Tbsp mayo
- Cut the ends of the cucumber off. Cut cucumber in half widthwise and then lengthwise – you should have 4 pieces.
- Trim off an even slice off the bottom round part of each cucumber so the cucumbers will sit without rolling side to side.
- Trim out the seedy area.
- Drain the tuna and mix with your shallots and mayo.
- Spoon tuna mix into your cucumber submarines. Optional to garnish your cucumber submarines with red chili flakes.
