Tuna Cucumber Boats

1 English Cucumber
1 can flaked tuna
1 shallot, finely chopped
2 Tbsp mayo

  1. Cut the ends of the cucumber off.  Cut cucumber in half widthwise and then lengthwise – you should have 4 pieces.
  2. Trim off an even slice off the bottom round part of each cucumber so the cucumbers will sit without rolling side to side.
  3. Trim out the seedy area.
  4. Drain the tuna and mix with your shallots and mayo.
  5. Spoon tuna mix into your cucumber submarines. Optional to garnish your cucumber submarines with red chili flakes.
