1 lb Roma tomatos
1 English cucumber
1/2 medium red onion, sliced
1 avocado, diced
2 Tbsp olive oil
Juice of 1 medium lemon (about 2 Tbsp)
1/4 cup cilantro, chopped (optional)
1 tsp sea salt
Pepper to taste
Place chopped tomatos, sliced cucumber, onion and avocados in a bowl. Drizzle with 2Tbsp olive oil and 2 Tbsp lemon juice. Toss to combine. Add the sea salt and pepper just before serving.
