Cottage Cheese Pancakes

1 cup cottage cheese
1 cup egg whites
1 cup oats
1 tsp vanilla
1 tsp cinnamon

Put all in a blender/food processor on high until the oats have been well blended and broken down (I use my Vitamix). This makes about 8 pancakes (they will be  about 5-6” in diameter)

The macros breakdown is as follows per pancake:

Protein: 8g
Carbs: 8g
Fat: 1.1

–even if you don’t like cottage cheese you won’t even notice it in this recipe but it will add some great protein to pancake Saturday or Sunday…or cook up a batch to have during the week.  I often make up a batch or double batch for my family to grab during the week.  These are perfect for the non-egg eater in the house to still get some morning protein rather than a carb laden toast breakfast 😉  Try topping them with jam or even peanut butter and of course maple syrup is a favorite too.
