If you have found this recipe without context or a link from me, you may be wondering what the heck “blobs” are!
Basically, I create this recipe so that there are enough liquids and dry ingredients to stick together while baking and then use a scoop to drop them onto a baking sheet. The result is not necessarily a cookie or a muffin, but rather, a blob 🙂
Also, I am famous for not measuring when I bake, so this is my base of ingredients and I add more or less depending on what I feel like or how it holds together, so use this “recipe” as your base.
Ingredients (and feel free to add on!):
- 3 mashed bananas
- 1/3 cup apple sauce (last time I made these, my apple sauce was moldy, so I omitted it)
- 2 cups quick oats
- 2 eggs
- “splash” of egg whites as needed for extra liquid (if you splash in too much egg whites, add more oats)
- 1/4 cup almond milk (or any milk you have, or omit it and add extra egg whites)
- 1 tsp vanilla
- 1 tsp cinnamon
- chocolate chips (as many or as little as you like)
- Preheat the oven to 350F
- Mix ingredients together and allow a few minutes for the oats to soak up the liquid.
- Line a baking sheet with parchment paper and scoop “blobs” onto the cookie sheet
- Bake for 20-25 minutes until they look done. Allow to cool and enjoy!
