Easy Tex-Mex Lasagna

Ingredients:

  • Nonstick cooking spray
  • 6 X 10″ tortillas (or you could use pre-cooked pasta or rice)
  • 15 oz can of tomato sauce
  • 15 oz can black beans, rinsed & drained
  • 1 cup frozen or canned corn
  • 1/2 cup chopped green onions (optional)
  • 8 oz package Colby-Jack or Mexican blend shredded cheese
  • Plain greek yogurt (optional)
  • Salsa (optional)
  • Pre-cooked chicken (ie. deli chicken or other pre-cooked chicken)
  1. Pre-heat oven to 400F
  2. Spray a 9X12″ baking dish with cooking spray; set aside.
  3. Cut tortillas in half. Cover bottom of baking dish with 4 of the tortilla halves, cut side facing edge of dish.  Layer with 1/3 each of the tomato sauce, beans, corn, green onions, chicken and cheese. Repeat layers twice.
  4. Cover with foil; bake for 20 minutes until heated through.
  5. Serve with plain yogurt and salsa
