Cashew Chicken

Ingredients:

  • 2-3 chicken breasts, cut into bite-sized pieces
  • 1 Tbsp cornstarch
  • 1 Tbsp soy sauce
  • 2 Tbsp oil, divided
  • 2 cloves garlic, minced
  • 2 tsp ginger root, minced
  • 2 bell peppers, diced
  • 1/4 cup Catalina dressing
  • 1/2 cup cashews
  1. Combine chicken, Catalina dressing, cornstarch and soy sauce. Marinate for 15 minutes
  2. Heat 1 Tbsp oil in a skillet. Add garlic and ginger; stir-fry for 1 minute. Add chicken; stir-fry 4-5 minutes or until slightly browned and chicken is cooked. Remove from skillet
  3. Add remaining oil and peppers to skillet; stir-fry on medium-high heat for 2 minutes.  Add chicken, top with nuts.
