Ingredients:
- 2-3 chicken breasts, cut into bite-sized pieces
- 1 Tbsp cornstarch
- 1 Tbsp soy sauce
- 2 Tbsp oil, divided
- 2 cloves garlic, minced
- 2 tsp ginger root, minced
- 2 bell peppers, diced
- 1/4 cup Catalina dressing
- 1/2 cup cashews
- Combine chicken, Catalina dressing, cornstarch and soy sauce. Marinate for 15 minutes
- Heat 1 Tbsp oil in a skillet. Add garlic and ginger; stir-fry for 1 minute. Add chicken; stir-fry 4-5 minutes or until slightly browned and chicken is cooked. Remove from skillet
- Add remaining oil and peppers to skillet; stir-fry on medium-high heat for 2 minutes. Add chicken, top with nuts.
