This recipe comes together in a snap using ingredients you likely have on hand and just 90 seconds in the microwave. You will need a digital kitchen scale to measure out the items in grams.
- 25 g quick oats
- 36 g protein powder (whatever flavor you use will become the flavor of the cake. I used chocolate Promasil)
- 7 g coconut flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp vanilla extra
- 75 g unsweetened apple sauce
- optional: chocolate chips to sprinkle on top
- Mix all ingredients together in a microwavable glass/pyrex/silicone bread pan (approx. 9″ X 5″)
- If you’d like to add a few chocolate chips, add them on top now.
- Place in microwave and cook for 90 seconds. (microwave times may vary based on models and power of microwave). After cooking, the middle will be gooey – I like to spread this on top of the cake for “icing”. If you prefer yours to be less gooey, try cooking it a bit longer.
