I found this recipe online at allthingsnourishing.com and I thought I just had to try it! I made a few edits to the recipe as per below:
- 16 oz frozen cauliflower (fresh works too!)
- 1/2 cup water
- 5 Tbsp cocoa powder
- 5 Tbsp maple syrup
- 2 Tbsp avocado oil
- 1/4 – 1/2 cup icing sugar (it tastes great with using 1/4 cup, but I added more to sweeten it up a bit from the cocoa)
- 1/2 tsp vanilla extract
- dash of salt
- I cooked the cauliflower in my Instant Pot on high pressure for 2 minutes using the 1/2 cup of water. If you don’t have an IP you could easily steam the cauliflower until soft.
- Transfer the cauliflower and water into a Vitamix (or other high powered blender) and mix until smooth.
- Add remaining ingredients and blend again.
- Chill in a bowl or individual serving dishes & enjoy!
