Protein mini-muffins

These mini muffins turned out so light that you could easily cut them in half and fill with cream and have yourself a protein cream puff!!  So tasty and easy.

Protein mini muffinsHere’s what you will need:

-4 scoops protein powder (I used Trutein’s Peanut Butter Marshmallow Cookie flavor)
-3 Tbsp coconut flour
-3 Tbsp coconut oil, melted
-1/2 tsp vanilla extract
-1/4 cup water (extra as needed)
-2 egg whites (6 Tbsp)
-1/2 tsp baking powder
-sprinkles (optional)

Preheat the oven to 350F

In a bowl, combine the protein powder, coconut flour, coconut oil, vanilla extract and water.  Add more water as needed to make a dough-type consistency.  Add egg whites and baking powder.

Scoop into mini muffin pan. (I used my medium sized scoop from Pampered Chef – these scoops work great for batters/doughs that are sticky).

Top with sprinkles.  Bake for 10-12 minutes until the tops are a light golden color.
