A great snack that is high in good fats, carbohydrates and even contains protein!
Ingredients:
- 1 cup peanut butter
- 1/4 cup honey
- 3/4 cup coconut oil
- 2.5 cups rolled oats
- 1 cup shredded coconut
- 1/2 cup chocolate chips
- 3 scoops protein powder (I used “All Natural Whey” by Precision with macros per 35g scoop of: 28g protein, 2g carbohydrates, 2g fat)
- dash of salt
- Melt the peanut butter, honey and coconut oil in a pot over low to medium heat. Remove from heat.
- Add the oats, chocolate chips and protein powder and mix well.
- Scoop into a 9X13 baking dish. Let chill for 2 hours or longer.
- Cut into squares.
