3 ripe bananas (mashed)
1/3 cup apple sauce
2 cups oats
1/4 cup almond milk
1/2 cup raisins or chocolate chips
1 tsp vanilla
1 tsp cinnamon
Preheat oven to 350F. Mix all ingredients together and drop by spoon onto a non-stick or parchment paper lined cookie sheet. Bake for 15-20 minutes. There is no added sugar in these “cookies” so these are also a great breakfast food paired with eggs! Plus, this is a great way to use up over-ripe bananas and this recipe works great when doubled.
To increase the protein in these cookies, you could add a few scoops of protein powder. You will just need to add a bit of water to mix it in. About 1/4-1/2 cup of water extra should suffice – add the water slowly so you don’t make the batter too runny as different protein powders will require varying amounts of extra liquid.
