Protein muffins & frosting

Protein muffins & frosting2 ripe bananas (I thawed 2 from the freezer that I keep on hand)

4 eggs

1/2 – 3/4 cup oat flour (you could also use 1/4 cup coconut flour)

fresh raspberries (optional)

200g plain Greek yogurt (0%)

Trutein protein powder preferred flavor.  In the recipe I used the lemon meringue and the birthday cake flavors  (I purchase mine online at www.bodynutrition.com)

Muffins:
1. Preheat oven to 350F.
2. Mix the bananas, eggs and flour in a bowl.  Ensure you oil your pans well or use silicone baking cups or foil lined muffin baking cups or your muffins will stick!  Drop 4 fresh raspberries into each muffin cup.  Spoon the muffin mixture into 12-14 muffin cups on top of the raspberries (use 1 raspberry per mini muffin cup)
3. Bake for 15-20mins until a toothpick inserted comes out clean.

Frosting:
1. Mix 100g of Greek yogurt with 20-25g of Trutein protein powder to preferred consistency.  Once the muffins are cool, spread the frosting and enjoy!
