Roasted Vegetables

3-4 cups vegetables of your choice
(I like brussels sprouts, peppers, zucchini, mushrooms..all mixed together or try roasting 3-4 cups of your favorite)
1/4 cup avocado oil
sea salt

  1. Preheat oven to 400F.
  2. Clean and chop all vegetables into a bowl.  Drizzle with oil and mix well.  Lay vegetables on a baking pan and sprinkle with sea salt as desired.
  3. Place in oven for 30-40 minutes turning halfway through baking

Easy and delicious!
