Oatmeal “to go”

2 cups oats
1/2 cup ground flax
2 cups egg whites
1/2 cup water
1 tsp vanilla
2 tsp baking powder

Sweeten by mixing in sweetened coconut, chocolate chips or dried fruit

Preheat oven to 350F.  Line a muffin pan with liners or spray with oil. Mix all the above ingredients and spoon into the muffin cups for 12 muffins.  Bake for 20-24 minutes.

9.3g carbs
5.2g fat
