1 head of cauliflower
2 eggs (you could sub in egg whites)
1 cup mozzarella cheese (you could use parmesan cheese here for an edgier flavor)
Garlic, pepper, basil, salt & desired spices to taste

- Preheat oven to 450F
- Steam or microwave the cauliflower until it is soft enough to mash. (I put mine in the microwave in a covered casserole dish and about 1/4 cup of water for about 12minutes.)
- Strain the cauliflower and mash it up! Place the cauliflower in a clean tea towel and ring out excess water (this is super important as quite a bit of water will drain out).
- Mix the wrung out cauliflower, eggs, cheese and spices together.
- Spread out evenly on a stone pizza sheet (I liked using the stoneware as it helps absorb excess moisture and I find home made pizza cooks more evenly on the stone but that is my preference. If you are not using a stone pan you may want to spray your pan or use parchment paper so the crust does not stick)
- Bake for 15-20mins (check at the 15min mark to see how it’s looking)
- Remove from the oven and top with pizza sauce and toppings of choice. If you’re looking to stay on plan, try topping with cooked ground turkey meat, mushrooms, peppers or other vegetables, basil, turkey pepperoni and sprinkle with a bit of cheese if your plan calls for cheese (there is cheese in the crust so you won’t need too much to top).
- Place back in the oven until the toppings are warm or the cheese is melted
- Slice into 8 pieces.
